Harissa

Harissa is a North African hot red sauce or paste made from chili peppers (smoked or dried) and garlic, coriander, caraway or cumin. Harrisa is the result ot the marriage of the Arabic, Indian and African influences. It is a blend that can kick the flavor of meals up a notch. Traditionally, harissa is used with cooked meats such as kebabs, served with couscous and is used as a condiment. It is a ubiquitous sauce that always appears at the table in the same way chili sauce appears on tables in Asia. It can be used as an alternative to chili sauce and spread on cold meat sandwiches as a spicy alternative to mustard. Harissa is delicious on crusty bread that has been spread with hummus. Serve with pasta, in sandwiches and on pizza. In some European countries like Germany, it is very popular at breakfast on tartines or rolls.
